Arch Linux is not the best choice for a server in production environments because of it's rolling release model. It requires some regular maintenance, and you might need to keep an eye on the wiki as well for instructions on how to deal with some major changes.
Ubuntu is based on Debian, which by default uses a stable branch. Usually with really old packages that only receive security updates.
